Hors D’oeuvres Smoked Trout Canape Chicken Wellington and Black Truffle Aioli
Monopole is the oldest white wine brand in Spain. Shiny gold yellow color. Very expressive and intense in nose highlighting its complexity as we can find Chamomile flowers, nuts, bakery or mineral aromas. Its entry in the mouth is vigorous, its passage through the palate is unctuous and velvety with a long, fresh and saline aftertaste. It is long and lively, perfect for pairing with any type of food or even alone.

Sushi Course Rainbow Display of Assorted Sushi Rolls (Seafood and Vegetarian Rolls)
This wine is from 100% Tempranillo grapes, hand harvested and transferred to stainless steel vats where cooling was applied to delay the onset of fermentation. The wine is strawberry red in colour with subtle blue hints at the rim. The nose gives aromas of sweets and red fruits with a touch of red liquorice. On the palate, the wine is very appetising with a smooth mouth feel and a long and fruit driven finish.
Cune Rosado 2019
Pork Course Entomacat Pork Stew Over Potato Pure and Garlic Toast Points
Grape Varieties: 85% Tempranillo, 15% Garnacha tinta and Mazuelo. A wine of medium intensity with maroon color. On the nose, we can find aromas of wild fruits and licorice, together with vanillas, toffees and cocoa from the American oak barrels. Soft entrance in mouth with rounded tannins and a slightly acidic end which leads to a long and fruity aftertaste.
Cune Crianza 2016
Lamb Course Roasted Leg of Lamb with Roasted Root Vegetables and Wild Mushrooms
This wine is a blend of 95% Tempranillo, and 5% Graciano. Intense cherry color. On the nose you will find great aromatic richness in intensity and complexity. It maintains a perfect balance between the aromas of tempranillo, such as mature wild fruits and licorice, with those from the graciano, which give the wine a mineral touch, all complemented with the roasted and balsamic aromas from barrel aging. The wine has an excellent entrance into the mouth, round and well-structured, with a good assembly between wood and youth, which provides amplitude and elegance. 93 points Wine Advocate; 94 points Tim Atkin.
Vina Real Gran Reserva 2012
Dessert Course Mille Feullie Strawberry Napoleon
Founded in 1888, and acquired by CVNE just three years ago, Roger Goulart is considered to be the leading producer of Cava in Spain. For the Gran Riserva, the grapes are hand-sorted of 60% Xarel-lo, 20% Macabeo, and 20% Parellada. The wine is pale yellow with golden highlights. The aromas have good intensity, with ripe white fruit such as apple and peach. Also aniseed notes, fennel can be found on the nose. There are reminders of pastries, yeast and dry flowers notes, with dried nuts. On the palate, the wine is wide on entry, full and creamy on the palate. Thick and velvety. The dry white flowers and fruit aromas come back on the palate. Good acidity provides a refreshing and lasting finish.
