Gulf Shrimp Ceviche with Cilantro Sauce
Varietal composition: 100% Sauvignon Blanc
Black Stallion Estate Winery 2024 North Coast Sauvignon Blanc opens with vibrant, tropical aromas of mango, lemon-grass, and honeysuckle, complemented by flavors of lime, lemon, ripe tropical fruit, and jasmine. Salad Course
Black Stallion Napa Valley Chardonnay 2024
Salad Nicoise with Haricot Vert, Eggs, Cherry Tomatoes, Herbed Potatoes, Nicoise Olives, and Bibb Lettuce
Varietal composition: 100% Chardonnay
The 2024 Black Stallion Estate Winery Chardonnay opens with vibrant aromas of citrus blossom, stone fruit, Golden Delicious apple, and a subtle hint of butterscotch. On the palate, bright citrus and juicy pear are layered with notes of toasted brioche and delicate vanilla from oak aging. Chardonnay from Los Carneros brings fresh acidity and a lean, structured backbone, while fruit from warmer Napa Valley sites adds richness, ripe orchard fruit, and depth. The result is a beautifully balanced Chardonnay with floral aromatics, a creamy mid-palate, and a long, elegant finish. Sip this wine on its own or pair alongside goat cheese, salads and dishes such as crab, lobster, grilled shrimp or roast chicken. 91 points James Suckling.

Rich aromas of black cherry, cola and a touch of brown sugar entice the senses, while the palate unfolds with luscious notes of plum, warm spice, and blackberry. A vibrant acidity enhances the wine’s depth, leading to a long, elegant finish. Our Los Carneros Pinot Noir is perfect for sipping on its own or pairing beautifully with glazed duck breast, chicken Marsala, or creamy, delicate cheeses like Brie and Camembert. 91 points Wine Enthusiast.
Beef Course
Black Stallion Meritage 2023
Beef Tenderloin Filet with Gorgonzola Crust and Whipped Potatoes
Varietal composition: 60% Cabernet Sauvignon, 17% Merlot, 13% Malbec, 5% Petit Verdot
The Meritage Red Wine Blend highlights the wealth of grape growing in Napa Valley. The Cabernet Sauvignon is the main component of this blend and adds bold dark fruit flavors as well as layers of intense complexity and structure. The Malbec and Merlot soften and round out the blend, with brighter fruit and lower tannin levels. The Cabernet Franc adds a firm backbone with juicy acidity. On the nose, the aromas are cassis, sandalwood, and clove. The flavors deliver notes of ripe blackberry, maple syrup and dark cherry. The tannins are broad, layered, and smooth. The finish is rich and elegant. 94 James Suckling.
