Varietal composition: 100% Sauvignon Blanc This delightful wine opens with an enchanting bouquet of elderflower and white peach, floral notes of orange blossom, and fresh citrus aromas. The underlying essence of salinity and minerality are reminiscent of ocean breezes which adds a distinct layer of complexity. As the wine unfolds on the palate, it offers a blend of vanilla and citrus. The ethereal lightness of pavlova mixed with pineapple and fresh kiwi provides a delicate balance to the overall structure. Floral flavors dominate with a very strong creamy texture that carries through the mid-palate. The finish leaves a lingering impression of ripe and fresh acidity.

Varietal composition: 100% Chardonnay On the nose, you smell honeycomb and apricot with a slight hint of warm spices. The color is bright, clear and golden with legs that gently slide down the sides. The taste is a treat of Meyer lemon and vanilla with a touch of Crème Brulee. It’s fresh, smooth and delicate. The complex flavors of the old vines make this wine an old soul. The finish lingers just long enough.

Varietal composition: 100% Pinot Noir Maxem is a single vineyard Pinot Noir from the celebrated Ulises Valdez Vineyard using the historical Calera clone. Energetic aromas of pomegranate; wild blueberries; rhubarb; bergamot; blood orange and Earl Gray tea lead into a tension-filled palate of crunchy red berries; wet stone; river rock and dried purple flowers delivering a liquid wonderland for the senses. Harnessed by the cool climate of the terroir; the fruit’s natural acidity sits on the finish for what seems like days; all wrapped in a luscious texture that defies logic and will have your palate swooning with delight.

Beef Course Filet Tips Au Poivre/Herb Focaccia
Varietal composition: 100% Cabernet Sauvignon. The aromas on this fully ripe 2019 Cabernet Sauvignon show lovely dark cherry and cocoa notes, baking spices and cedar bark, anise, currants, berry jam. Full, soft and velvety at entry, the palate impression is broad and very smooth, with bright fresh fruit elements. Nice resolution between oak and fresh berry notes at finish leave a bright, juicy impression.

Varietal Composition: 87% Cabernet Sauvignon, 10% Merlot, 3% Petit Verdot As this fresh red blend swirls in the glass, bright aromas of fresh raspberries lift, along with basil, sweet sage and toasty vanilla notes. The entry is fully fruit driven with bright fresh acidity and soft, juicy tannins. Texturally the wine is vibrant and showy, with lingering tones of fresh cherries and a hint of vanilla.
