Hors D' Oeuvres Fennel Roasted Oysters Rockafeller Chervil Hollandaisse Serrano Ham, Wrapped Baby Asparagus Citrus And Honey Gastrique, Polenta Crouton
The warm climate of Pezzi King”s Dry Creek Valley produces Sauvignon Blancs with flavors of tropical fruits and melons. With the Valley’s cooling coastal influence at night, the fruit is balanced with crisp acidity and freshness. Once the fruit is pressed, it’s left to settle, then racked off for a clean, cold fermentation.. The 2009 is 100% Sauvignon Blanc. Only 720 cases were produced and wine maker Chris Barrett notes “This wine unfolds aromas of tropical melons, green apples and honeysuckle. Bright acidity keeps the flavors in focus of white peach, nectarine and grapefruit. Medium bodied and fresh; the perfect wine to pair with scallops and oysters.”

The fruit is sourced from the Bacigalupi Vineyard in the Russian River Valley. Coastal influences provide these grapes with depth of flavors and acidity that showcase the old Wente clone. Once the fruit is pressed, it’s racked off into barrels and stirred twice a week during primary and secondary fermentation giving the wine a full body on the palate. The wine maker notes that this wine is framed with aromas of pear, brulee, lemon oil. Dry apricot with a note of toasted hazelnut is the start to this full expression of the Russian River terroir. In the mouth, the texture is layered and seductive, revealing peach blossom, vanilla, and white truffle, and ending with a seamless finish.

The coastal influence creates optimal growing conditions due to its warm days followed by cool nights making for a perfect balance between fruit expression and acidity. Fruit is carefully handpicked before it is brought into the winery were it is de-stemmed and undergoes a “cold soak”, which extracts color and flavors before fermentation begins. The wine is aged in 30% new French oak for about 18 months. Saturated ruby in color with scents of ripe boysenberry, toasty oak, sweet vanilla. Full bodied with black raspberry, pepper and hints of truffle. Multilayered flavors harmonize with ripe tannins a long lusty finish. 4,000 cases made.

Zinfandel is the foundation of Sonoma’s Dry Creek Valley and much of the original 137 acres that Pezzi King purchased were very old Zinfandel vines. The grapes are often fermented naturally creating a complex cascade of flavors and aromas. After fermentation is complete, the free run is separated from the hard press and put into French oak barrels and aged for 16 months. Lush and expressive are these Old Vine Zins as they unfold aromas of ripe wild berries, anise, and cracked pepper. Broad on the palate with jammy black berries, spice and cocoa as fleshy tannins finish the lingering notes with cherry and the Dry Creek dustiness. 1000 cases made.
