Course Pairing / Description Wine

This delicious bubbly -- mostly Chenin Blanc, plus 10% Chardonnay -- mixes spicy yeast with clove and herb scents. Full-bodied fruit flavors follow, with a slight hint of candied sweetness. The finish wraps you in hints of vanilla and light toast.
Bouvet Signature Brut

Régis Camus, winemaker at Piper-Heidsieck, has carefully selected the best Champagne crus to produce a wine of excellent quality, as for all the Piper-Heidsieck cuvées. This delightful, ample and generous champagne reveals a subtle, gentle combination of freshness and liveliness. The winemaker chose Piper Heidsieck's emblematic cuvée as a base and has accentuated softer aromas to endow this wine with a personality all of its own. This is a sumptuous champagne with deeper, stronger undertones. Let yourself be tempted by a deliciously flavoured macaroon, a square of strong dark chocolate or a slice of melt-in-the-mouth cake…
Piper Heidsieck Sublime

A crisp, racy Sauvignon Blanc with pure fruit and herb varietal aromas, this wine shows clean, intense citrus, apple and mineral flavors finishing with a tangy, high-toned, cleanly balanced acidity.
Michel Redde Sancerre Blanc

A ruby coloured wine of good intensity that is distinguished by notes of pepper, cedar wood, vanilla, dark tobacco and coffee. The wine then opens with typical primary notes of pinot noir – cherries, blackcurrants and violets. The wine is well-balanced on the palate but announces a certain austerity in the finish. The grape skin tannins are fine but still dominant. Greater harmony will no doubt be achieved through further ageing.
Louis Jadot Gevrey Chambertin

Sweet bouquet of raspberry, maple and a hint of rose petals. More complex flavors on the palate with forest floor, bramble and truffle notes. Soft on the finish with continued oak and leather accents.
Maison Bouachon Chat Du Pape

Bright, deep ruby-red. Sweet, enticing aromas of redcurrant, plum, coffee and meat. This offers lovely sweetness in the mouth, with a terrific core of fruit and a captivating sugar/acid balance. Unusually dense for this second wine. Finishes long and firmly tannic, with plenty of lingering flavor. The best yet for this label.
