Hors D’oeuvres Coconut Crusted Chicken with Apricot Relish Pear and Brie Cheese Roulade in Phyllo
The 2018 vintage was a winemaker’s dream vintage. Consistent growing conditions and cooler temperatures allowed the grapes to slowly mature. Harvest across Napa Valley was generous with above average yields and high-quality fruit. In Carneros, this immensely successful 2018 harvest gifted us the best Chardonnay grapes we could wish for. Aromas are deep and broad: Golden apple skin, baby pineapple, white flowers bouquet. With air, vanilla emergences alongside rich brioche and dried apricot notes. The palette is full and generous, the complex flavors compliment the nose with hints of key lime pie and coconut sherbet. Drink between Spring 2020 and 2026.

Salad Course Roasted Golden Beet and Quinoa Salad with Pomegranate Vinaigrette
The 2019 vintage may just steal the show as the best of the decade for Pinot Noir in Napa. The crafting of Batch #35 started in the vineyard to walk the line between a Grand Cru Burgundian Pinot Noir and a Californian one. Evocative aromas of black cherries, rhubarb, black tea and pomegranate. The flavor spectrum is wide, ranging from black compote, fresh violet, toasty oak and exotic sweet spice that weave seamlessly together into a voluptuous long finish. This wine will develop different aromas, flavors with a savory complexity with time in a decanter or in the cellar.

Red and black berry fruit aromas leap from the glass accented with a trace of chili pepper. On the palate, the texture is at once “light” and dense. Bittersweet chocolate and cola interplay with a kiss of French Oak making a second taste irresistible. The finish lasts for several minutes so you can slow down a little if you must!

Dark on the nose with aromas of cola, hot cocoa, espresso beans and cedar. On the palate, this Diamond Cab is distinctive, rich and full body, without being weighty. Chocolate truffle, mocha, cola, mulberry and black cherries form the core, with spicy notes of dried herbs and cedar that linger into what may seem like an eternal finish. Dessert Course Strawberry Shortcake
Our 6th Rosé release and first pink Sauvignon Blanc. This batch totally happened by accident. At The Vice, we encourage our team members to embrace their vices as part of a healthy and balanced lifestyle. Our cellar master may have taken it a bit too far the night of November 22nd, 2019. He accidentally racked a barrel of Diamond Mountain Cabernet into one of our Rutherford Sauvignon blanc stainless steel tanks. The result was beautifully coral pink and surprisingly very delicious. While we suspected that he may have been tasting too much wine throughout the day, he later admitted that another vice was to blame. Marijuana. Expect the nose to be tropical with notes of passionfruit, gooseberry and pomelo. Give it another swirl, undertones of white peach, bubble gum and a hint of mint may lure you to take the long-awaited sip. On the palate, the entrance is lively, crisp and bright. Flavors matching the nose start to settle in reminding you that you are sipping a Sauvignon Blanc, but the finish is marked with red berries and a kiss of strawberry confirming that you are indeed enjoying a rosé.
