Zealand’s South Island. A beautiful light straw color with a tint of green. Zesty citrus
and floral aromas lead to balanced flavors of passion fruit, melon, fig and gooseberry,
followed by a clean, refreshing finish. It’s exquisite on its own or paired with lighter fair.
Salad Course
Bravium Anderson Valley Chardonnay 2018
Winter Micro Salad and Radish with, Dried Cherries and Crispy Prosciutto, Raspberry Vinaigrette
This vivacious wine reflects the perfectly-sited vineyard where it was grown. Pale-gold in color, with fresh lemon and tropical fruit aromas, clove spice, exotic white flowers, and saltwater taffy. Opens with lemon meringue and apple pie flavors, with a lightly creamy mid-palate and medium-plus acidity. This Chardonnay is fully realized, deftly walking a tightrope balanced between generosity and elegance. Persistent and complex flavors — with a transparent soil signature — linger on the finish of this delicious wine.

Grilled Lamb T-Bone Chop with Rosemary Demi-Glace, Roasted Pearl Onion and New Potatoes
This Bordeaux-style blend highlights the incredible selection of estate vineyards
at my fingertips and vineyards from a wide range of Napa Valley. A vibrant, elegant
red wine, it delivers intricate aromas of floral notes, crushed flowers, blueberry
compote, ripe cranberry and violets on the nose. Rustic and course layered flavors
of dark fruit and creamy black fruit are revealed across a multi-layered palate,
framed by fuzzy tannins, a voluptuous mouthfeel and a long, spicy, chewy finish.– Mario Monticelli
Beef Course
San Polo Brunello di Montalcino 2015
Five Spice Roasted Beef Tenderloin, Balsamic Glace, Roasted Wild Mushrooms and Parmesan Crisp
One of the best vintages in the last twenty years. Intense ruby red in colour with garnet hues, clear and glossy. The
bouquet exhibits typical aromas of violets and small red berries.
Subtle nuances of forest undergrowth, aromatic wood, a touch of
vanilla and jammy mixed fruit then give way to subtle hints of coffee.
This Brunello is intense, persistent, broad and heady. Full-bodied and
warm on the palate, with a densely-woven texture and robust body,
it has a persistent finish with well-rounded tannins. The particular
features of the terroir at San Polo produce a Brunello with a capacity
for lengthy ageing, while patient cellaring enhances the wine during
ageing in the bottle.

Chip Wine
Trinchero Napa Valley BVR 2013
The pinnacle of the portfolio, this sustainably sourced Cabernet Sauvignon has a dense, deep purple hue indicative of its highly concentrated palate. The nose is rich, with powerful blueberry, currant, crushed rock and licorice aromas. Earthy flavors are framed by youthful, chewy tannins and a robust, dense, complex structure. This wine reflects the intensity of its mountain origins and has tremendous aging potential with a long, spicy finish and hints of baking spice.
Bravium Anderson Valley Pinot Noir 2016
From the far reaches of Mendocino, this elegant wine is pure and suave. Ruby red color with aromas of strawberry, rhubarb, rose petal, raspberry, wild berry, woodsmoke, damp soil, pine, and red cherry. A soft, juicy entry delivers concentrated berry patch flavors, balanced by sappy and savory whole cluster-derived notes, with medium acidity and a supple, mineral-driven undertone. Fine-grained tannins join spice notes on the creamy, beautifully layered mid-palate. This balanced Pinot Noir has a great core of red fruit, stellar focus, just enough grip, and a complex finish.
