Hors D' Oeuvres Cashew and Coriander Crusted Crab Cakes (Roasted poblano pepper and cilantro aioli) Gruyere Cheese & Leek Tartlets (Parsley, shallot and garlic)
Refreshing and crisp, Slingshot Sauvignon Blanc has aromas of pineapple, mango and white peach. With balanced acidity and a textured pallet, this wine features flavors of lemon zest, lime and honey suckle. This balanced and elegant Sauvignon Blanc begs to be drunk immediately. All Slingshot wines begin with premium Napa Valley fruit, much of it harvested from Stewart’s own Juliana Vineyards where they strive, through sustainable methods, to grow quality fruit for generations to come. They don’t compromise when it comes to grapes because they’re committed to giving their customers sophisticated, approachable wine at a great price. Slingshot is a family effort shepherded by James Stewart, one of Napa Valley’s next generation winemakers - a group of young men and women assuming central roles in legacy wine businesses. James joins his peers in focusing on issues surrounding sustainability, preservation, labor practices and maintaining family-owned businesses. Slingshot reflects his ambition to preserve a vital family enterprise and practice meaningful land stewardship - both while producing unpretentious fine wine.

The Stewart Chardonnay is a plush, fragrant, young wine showing a delicate balance between flavors of the fruit and the careful touch of the winemaker. A pretty medium yellow in color, this wine is only very slightly hazy after bottling without filtration. Its aroma starts with a bouquet of floral notes and a bit of honey. The nose then opens with wisps of lavender, cinnamon and just a hint of toasted grain from the French oak in which it was fermented. Time in the glass reveals underlying ripe pear and baked apple that promises to be the core of the wine as it develops in the bottle. In the mouth, it is rich and round without an angle or edge, soft and plush throughout with the pear and apple flavors leading to the honey and floral finish.

Poultry Course Wine Braised Chicken Thigh Cannelloni (Thin crepe with pinot braised mushroom and tomato pomodoro with micro basil and shaved parmesan cheese)
The Stewart Pinot Noir clearly shows the quality and character of the stellar vintage. The wine is dark purple, immediately forecasting its concentrated dark fruit core. Its aroma is loaded with berry and dark toffee notes, mingling with a subtle touch of very fine French oak. In the mouth, the wine is rich and dense, powerful for a Pinot Noir, with a little young tannin that will melt away with years in the bottle. The ripeness of the vintage is evident in the layered notes of plum, cranberry, pomegranate and molasses. The dense, fleshy texture continues through a long, juicy finish.

Beef Course Cast Iron Seared Wagyu Flank Steak (Creamy nutmeg scented potato soufflé, cabernet-shallot demi and grilled asparagus spears with roasted red pepper coulis)
The Slingshot Cabernet Sauvignon is 100% Napa, from three different esteemed vineyards. Primarily from Stewart’s Julianna Vineyard in Pope Valley, this expressive Cab delivers the rich, upfront fruit of the northern Napa vineyard with the darker tones of the two more southerly mountain vineyards. These same vineyards make up a large component of another wine in Stewart’s portfolio that is four times the cost. This wine was aged for 22 months in French barrels, 30% of them new.

Dessert Course Lightly Sweetened Black Pepper, Basil & Brie Tartlet (Fresh blackberries with warm cabernet butter, whipped cream and roasted hazelnut and steel cut oat streusel)
The 2013 Hollis Cabernet Sauvignon is the sixth release of Hollis from the Stewart Cellars portfolio of fine wines. Hollis is the second label to Stewart Cellars and is perfect for Cabernet bargain shoppers. With fruit sourced from Max Vineyard, Hollis is crafted with the help of Stewart’s consulting winemaker, Paul Hobbs. This Cabernet is a rich and plump wine from a great vintage, with the structure of grapes grown in great sites and complexity of careful raising in the cellar to age nicely for a decade at least. It is accessible now with engaging and rich, fruit forward components dominated by cassis, black cherry and tobacco. It offers a muscular mid-palate full of soft tannins with notes of chocolate and coconut husk and it has a very long, lingering finish.
