This Chardonnay captures the essence and purity of the varietal when it is grown in one of the world’s best Chardonnay producing appellations. Sonoma County’s coastal climate and long, cool growing season allow these delicate grapes to ripen to full flavor maturity, while retaining the natural acidity to ensure a fresh and lively expression on the palate. During fermentation and aging, we strive to accentuate the pure varietal flavors of the grapes, and the quality and character of the vineyard sources. This Chardonnay was fermented and aged in a combination of French oak barrels and stainless steel tanks for eight months before bottling.

Appetizer Course Seared Jumbo Scallop And Butternut Squash Risotto Cake Caramelized Sweet Onions, Bacon Lardon And Fresh Sage
Possessing great definition and ripeness, as well as fresh, lively acidity, this Chardonnay shows the spectacular quality of the 2012 vintage. The nose is concentrated and effusive, with lovely layers of orange zest, lime, lemon drop, pear, Fuji apple and lychee, all underscored by hints of clove, nutmeg, vanilla and toast from barrel aging in French oak. On the lushly textured palate, flavors of lemon custard, ripe peach, apricot, crème fraîche and quince lead to a long, resonating finish. To add depth and complexity, the 2012 vintage also includes fruit from Poe Vineyard in Napa-Carneros and Red Hen Vineyard in Oak Knoll. This wine was aged on its lees for eight months in one-third new French oak barrels. For added texture and viscosity, a significant portion of the wine underwent malolactic fermentation.

This Sonoma County Pinot Noir is the stylistic sibling to the Sonoma County Chardonnay, with both wines showcasing the pure varietal character that can be achieved when these grapes are grown in the ideal locations. Sourced fruit from top cool-climate Sonoma County vineyards. The majority comes from one exceptional vineyard in Franz Valley (66%), with the remaining grapes (34%) coming from prized sites in the Russian River Valley appellation. The result is a fruit-driven expression of Pinot Noir with abundant spicy berry and red fruit notes, as well as refreshing acidity. It was aged for 10 months in French oak barrels and gently handled to preserve the delicate nuances of the Pinot Noir. This wine begins with a nose that is both vibrant and alluring, with lovely red fruit aromas of raspberry and cherry, as well as layers of currant, rose petal, anise, nutmeg and vanilla. Strawberry and cranberry flavors glide across a silky palate, with bright acidity adding poise and dimension, as well as a mouthwatering freshness that makes this wine beautifully drinkable in its youth.

Blended from the traditional Bordeaux varietals, including our own coveted grapes, the Chappellet Mountain Cuvee Proprietor’s Blend builds on decades of experience crafting great Napa County mountain-grown wines. Each component varietal in the cuvée contributes nuances that complement each other. The result is a complex array of aromas and flavors that deliver pure pleasure in a glass. Made for more near-term consumption, this is the wine to choose when you’re looking for vivid, mouth filling fruit flavors. The 2012 vintage offered fantastic growing conditions in Napa County. Significant rains in early March were followed by perfect weather during bloom and an excellent fruit set. Summer temperatures were also ideal. The aromas are rich, ripe and enticing, with sweet fruit layers of plum, bing cherry and cassis, as well as notes of mocha, roasted coffee, cedar and baking spices, all supported by delicious hints of French oak. On the palate, this wine is supple and round, with balanced tannins, weighty texture and a smooth, mouth filling structure.

Dessert Course Dark Chocolate Decadence & Espresso Mousse Shooter Blackberry-Cabernet Jam With Smoked Sea Salt And Sugar Rolled Raspberries
The Signature Cabernet Sauvignon has been Chappellet’s flagship wine for more than four decades. It is a benchmark for the long-lived hillside wines of the Napa Valley; full of structure and aging potential, yet seductively forward in its concentrated varietal character. The dry, rocky soils of Pritchard Hill produce small, intensely flavorful grapes. Crop thinning allows for full, even ripening and further elevates flavor complexity. This is an amazingly rich, complex and satisfying wine filled with plush, ripe fruit and abundant spice. On the nose, enticing layers of dark cherry and blackberry combine with rich Bordeaux aromatics of sweet tobacco and cedar. Elements of chocolate and roasted coffee add a hedonistic dimension, with underlying new oak providing sweetness and elegant spice. The palate is broad and mouth filling, with flavors of juicy, dark fruit, black currant, espresso and bittersweet chocolate. Supple, layered tannins accentuate this wine’s velvety richness and weight, while carrying it through to a long, seamless finish.
