Hors D’ Oeuvres Station PLANTAIN CRUSTED JUMBO SHRIMP SWORDS BURNT LEMON AIOLI
This is Sauvignon Blanc at its purest, opening with distinct notes of yellow apple, pineapple and barely ripe banana. A somewhat viscous texture carries the flavors of nectarines, orange blossoms and honeydews beautifully, and though there is no oak, the wine has a good sense of weight and flesh. With balancing acidity that keeps it crisp and snappy, the wine closes with a long lasting and satisfying finish.

This Chardonnay showcases intriguing, yet focused, aromas of ripe apple and pear, preserved lemons and toasted pineapple, with a welcomed hint of lightly toasted brioche. This refreshing Chardonnay has a wonderful fruit intensity and bright acidity that linger throughout the finish.

The 2010 Napa Valley Merlot opens with generous aromas of cranberry, red plum, pomegranate and dark chocolate, with an enticing herbal note of eucalyptus. Juicy pomegranate remains consistent on the palate and is joined by subtle nuances of spice and black pepper, and a hint of sweet smoke from oak barrels add a welcomed complexity. The vibrant fruit and oak integration carries through to the finish, while the fine, dusty tannins softly structure this elegant wine.

Ripe, rich and, beautiful this classic Napa Valley Cabernet Sauvignon shows aromas of raspberry, strawberry, milk chocolate, red cherry, and pure vanilla extract. In the palate are more black fruit flavors of black currant, black cherry, and clove! From the nose to the finish, this is one seductive Cabernet. There’s such a wonderful bright ripe delicious fruit that just envelops you and begs you to drink more. “St. Clement's 2010 Cabernet Sauvignon is a lovely entry-level bottling. Sweet dark cherries, plums, cloves and mint are some of the aromas and flavors that jump from the glass. There is a gorgeous brightness and freshness in the 2010 that is highly appealing. This juicy, flavorful Cabernet is a great introduction to the vintage and the St. Clement wines. Anticipated maturity: 2016-2028." 91 Points Vinous / Antonio Galloni "Firm and spicy, revealing an attractive red berry and red candy edge to the flavors. Finishes with a tight, focused beam of fruit. The fine-grained tannins give the flavors grip." 90 Points Wine Spectator

Dessert Course SALTED CARAMEL AND DARK CHOCOLATE TORTE BLACKBERRY AND CABERNET JAM WITH FRESH BLACKBERRIES AND ROASTED SESAME ROLLED VANILLA BEAN ICE CREAM
Rich and concentrated, the 2006 Oroppas opens with aromas of black plum, vanilla, brown sugar and cinnamon. On the palate, flavors of black currant, roasted coffee and bittersweet chocolate are wrapped in velvety tannins. Notes of dark chocolate and raspberry jam lead to a long finish. A small amount of Cabernet Franc and Petite Verdot were added to the blend to enhance the structure and mid-palate weight. Each lot was aged separately in 75 percent new French oak barrels for nineteen months, and then blended together before bottling. "The structure and pedigree of this fine wine are immediately apparent. It hits the mouth with a wonderful balance of ripe fruit, fine tannins, firm acidity and perfectly integrated oak. The deep flavors of blackberry jam spread onto buttered toast, and drizzled with anise liqueur and melted chocolate, are irresistible. But the tannins are still hard. Decant now for a few hours, or drink through 2014." 94 Points Wine Enthusiast "Ultra rich and concentrated, delivering plush blackberry, currant, black cherry and spicy anise flavors that are pure, focused and full-bodied, with a long, persistent finish that ends with a supple texture. Best from 2011 through 2017. 5,072 cases made." 92 Points Wine Spectator
