Hors D’oeuvres Sous Vide Jumbo Shrimp with Citrus Aioli Avocado Toast Crostini
Varietal composition: 100% Albarino Intense aromatics of white peach and pink grapefruit follow through on the vibrant palate. Packed with zesty acidity, the wine refreshes with its juicy nectarine flavors, backed by undercurrents of grapefruit pith, lemongrass and lime zest.

Salad Course Spinach and Manchego Salad with Marcona Almonds, Roasted Tomato, Shallot Vinaigrette and Balsamic Drizzle
Varietal Composition: Cabernet Sauvignon Aromas of cigar box, brambly blackberry, cassis, licorice and black plum. The palate is smooth, with ripe and well-integrated tannins that provide a well-balanced structure. Herbal notes of black currant leaf and whole tobacco.

Varietal Composition: 100% Cabernet Franc An elegant, full-bodied red which displays dark fruit flavors paired with savory, earthy undertones. Bright acidity and soft tannins make this a versatile food wine. The Big Flower range is crafted 100% from grapes grown at Protea Heights, Botanica’s organically farmed estate vineyard. The floral labels pay tribute to Botanica’s heritage as South Africa’s first commercial flower farm.

Beef Course Braised Beef Short Rib with Potato Parsnip Puree and Pea Tendrils
Varietal Composition: 49% Cabernet Sauvignon, 28% Merlot, 17% Cabernet Franc, 6% Petit Verdot Arboretum is crafted from the fruit of the organically farmed estate vineyards in Devon Valley, Stellenbosch. It is a blend of the best barrels the vintage gives the winemaker. This rich, smooth Cabernet Sauvignon dominant Bordeaux-style blend displays lovely blackberry, black cherry, and tobacco notes on the nose. On the palate, it boasts a core of opulent plum and cassis fruit, with firm tannins providing great texture and structure. Vinous Media 90 points, Tim Atkin MW 91 points.

Dessert Course Chevre Cheesecake with Blueberry Compote and Granola Crunch
Varietal composition: Chenin Blanc Complex and elegant, with layers of pure, concentrated pear, citrus and stone fruit flavors, mouth-watering acidity and a tangy, mineral core. The Mary Delany Collection is crafted from grapes sourced from unique vineyard sites throughout the Cape. Each of the labels depicts a botanical collage created by British artist Mary Delany. These remarkable works of art were hand crafted in the late 1700s using hundreds of tiny pieces of cut paper.
