Hors D’oeuvres Mahi Mahi on Plantain Chip with Tropical Salsa Pear and Brie on Phyllo
When Joe Wagner ventured up to Oregon, one of the world’s renowned regions for Burgundian varietal wines, he really liked what he saw. A vision quickly took shape and his goal with Elouan was simple: to produce Oregon Pinot Noir and Chardonnay that reflect Oregon’s coastal regions. The 2018 Elouan Chardonnay has an abundant floral aroma of acacia blossoms and rose petals accompanied by citrus and white pear. Pale straw yellow in color, this Chardonnay has bright acidity with very light oak followed by flavors of tropical fruit, lime zest and a touch of nectarine. This wine has a smooth and well-balanced mouth-feel, with a lingering and bright finish.

Böen draws its profile from the varied coastal winegrowing areas that are among California’s most sought after cool-climate appellations. Each area Boen originates from offers optimal growing conditions for this temperamental and early-ripening variety. This stretch of the California coastline is so geographically diverse that the various soil types, sub-climates, and elevations produce desirable and complex Pinot Noirs. To create the Böen Pinot Noir, the winery works closely with growers and vineyards in each region to blend a well-balanced wine. This wine shows its coastal California roots in its flavor, texture, and vibrant acidity. The Tri Appellation Pinot Noir sources its fruit from Sonoma County (24%), Monterey County (54%), and Santa Barbara County (22%). Dark plum with ruby red highlights in color, this wine offers a cherry cola, cranberry, and herbaceous aromas. On the palate it bursts with bright fruit flavors of cherry, strawberry, and blackberry. This Pinot Noir is very well balanced with hints of cocoa and caramel on the long lasting finish.

Poultry Course Roasted Pheasant with Wild Mushrooms and Tomato Jam
In a very special 1.5L format (a first for a Vintners Club dinner selection wine), this very special single vineyard Pinot Noir was bottled in 2011 and aged in the bottle for eight years before its initial release. The Belle Glos Pinot Noirs are Joe Wagner's single vineyard California Pinots named in honor of his grandmother, Lorna Belle Glos Wagner. At less than six miles from the Pacific Ocean and subject to sometimes ruthless fog and winds, the Belle Glos Taylor Lane Vineyard can make growing grapes an act of faith. Dark violet to ruby red in color this Pinot Noir has aromas of Bing cherry, blackberry, pepper, tobacco, and forest floor on the nose. Flavors of cherry, apple, and blackberry are balanced with pleasant acidity and nice minerality resulting in excellent depth and concentration that lingers through to the silky, smooth, and supple finish. This wine tastes great now until 2028. 93 Points, Wilfred Wong, Wine.com; 90 Points, Wine Enthusiast

For Napa Valley Quilt, the grapes come from a patchwork of prime Napa Valley vineyards to create a classic Cabernet Sauvignon the way Joe Wagner’s family has made it for five generations. Dark plum with cherry highlights in color, this wine opens with abundant aromas of tart blackberry, chocolate nibs, and cassis with hints of culinary herbs and lightly toasted oak. It has a rich and satisfying mouth feel, with flavors of boysenberry jam, black cherry pie filling, and cocoa layered with notes of vanilla and hazelnut. Full yet elegant on the palate, with strong acidity and a long, smooth finish accompanied by velvety tannins.

Dessert Course Apple Tarte Tatin
A lover of Champagne, Joe Wagner has long wanted to create a classic sparkling wine using Pinot Noir and Chardonnay fruit. Steorra, his first-ever sparkling wine, takes its name from the Old English word for ‘star’. Steorra is a non-vintage, brut-style sparkling wine sourced from Sonoma County’s cool-climate Russian River Valley. Made in an elegant, soft style with a fine bead and universally appealing flavors of Granny Smith apple, fresh cream, a hint of fresh sugar-cookie dough, a subtle toastiness and a vibrant finish.

The Quilt Cabernet Sauvignon garners its distinctive style from the diverse vineyards found in the mountains, bench lands, and valley floor of Napa Valley. The well-drained, nutrient-deprived soils found in each of these topographies stresses the vines, resulting in grapes with extraordinary color, texture, and flavor concentration. .For the 2016 Napa Valley Quilt Reserve, the developing wine was tasted throughout the fermentation and aging processes, then the best 2% was set aside for this reserve bottling. The lot selection was based on intensity, complexity and boldness of expression that could withstand a longer aging cycle and heavier use of new French oak. Dark ruby red in color, this wine opens with rich aromas of chocolate, black currant, ripe blackberry, and marionberry intertwined with caramel and leather. On the palate it presents with a complex and bold assemblage of dark currant, blackberry, marionberry, and toasted hazelnut balanced with hints of cardamom and dry dark chocolate. A full-bodied, quintessential Cabernet structure is shown with layers of concentrated black fruit, bright acidity, and excellent balance. The wine's breadth and structure is further complemented by a supple, velvety mouthfeel, with fine-grained tannins. The finish is long, smooth, and satisfying. 91 Points, Wilfred Wong, Wine.com
