Varietal composition: 100% Chardonnay. The 2021 Napa Valley Chardonnay is intended to be the best of both worlds stylistically. The nose opens with rich and layered aromas of pear, mandarin, tuberose, vanilla and oak spice. The palate is met with flavors of brioche, apple pie, lemon curd and fresh pineapple. It has a creamy texture reminiscent of creme brûlée with a finish that is bright and complex with incredible length. James Suckling 94 points, Robert Parker 92 points.

Salad Course Compressed Watermelon with Goat Cheese, Red Onion, Micro Arugula and Balsamic Reduction
Varietal Composition: 97% Sauvignon Blanc, 3% Semillon. This Sauvignon Blanc is a great accompaniment to a spring or summer day. Bright, lively, and aromatic, this wine opens with notes of tropical fruits, lemon zest, lime leaf, and honeydew. The palate is crisp and fresh with flavors of mandarin, grapefruit, cantaloupe, apricot, and lemongrass. There is plenty of minerality and bright textures to make this wine great on its own or paired with salads, seafood, and poultry dishes.

Beef Course Oxtail Ragout with Polenta Cake and Forest Mushrooms
Varietal Composition: 90% Cabernet Sauvignon, 5% Merlot, 2% Malbec, 2% Petit Verdot, 1% Cabernet Franc. The 2019 Napa Valley Cabernet is our interpretation of a quintessentially classic style. The color is deep garnet and the nose yields aromas of dark chocolate, pomegranate, cedar shavings, blackberry, and leather. The palate exhibits flavors of blueberry compote, black cherry, espresso, and cigar box with bright and juicy fruit forward sensations. The texture is rich and bold with well-structured tannins that make it approachable now and will yield great results in the cellar for decades. Jeb Dunnuck 91 points, Wine Enthusiast 93 points.

Beef Course Beef Short Rib with Sweet Potato Gratin, Baby Zucchini and Natural Reduction
Varietal Composition: 83% Cabernet Sauvignon, 13% Petit Verdot, 4% Cabernet Franc. Sourced from Bosche, Sycamore, and Red Barn Ranch Vineyards, this wine displays all the classic notes of the Rutherford AVA. It is a deep garnet and opens with aromas of brambly black fruits, cedar shavings, milk chocolate, graphite, and forest floor. The palate is complex and richly textured with flavors of blackberry, coffee, cigar box, and cassis. The tannins are dusty yet well rounded and integrated, making this wine lovely now with the ability to age gracefully for decades. James Suckling 95 points, Robert Parker 94 points, Vinous 93 points.

Dessert Course Dark Chocolate Cake with Cherry Simple Syrup, Vanilla Bean Chantilly Cream and Candied Pecan
Varietal composition: 83% 80% Merlot, 14% Cabernet Sauvignon, 6% Petit Verdot. Red ruby color, our merlot expresses red and blue fruits, composed of dried cherries, ripe strawberry, blue berry cobbler, fruit cake, red raspberry jam, and plum. A very pleasant complexity includes baking spice, leather, milk chocolate and arugula. The spicy oak is very well integrated. Entry and finish are very smooth, with fruit resembling cherry and plum nuances. This Merlot has a good overall balance of fruit, body, and tannin, with a long fruitful finish. Jeb Dunnuck 93 points.

Chip Wine
Varietal Composition: 93% Cabernet Sauvignon, 7% Merlot. The nose exhibits aromas of black cherry, mocha, cassis and forest floor. The palate is bright yet creamy and filled with notes of forest fruits, leather, baking spices and soft vanilla. The textures are vibrant and integrated making this wine lovely now with the ability to age for decades in the cellar. Wine Enthusiast 98 points.
