Course Pairing / Description Wine

Varietal Composition: 100% Monastrell The flagship wine, Juan Gil Silver Label, is made with certified organic Monastrell grapes from over 40-year-old vines. The chalky and rocky limestone soils, poor in nutrients, are ideal to grow the Monastrell varietal, and the vineyards are low yielding, about 1.04 tons/acre. The Gil family uses progressive winemaking techniques including laser optic sorters after grape harvest to ensure the best fruit is selected. The wine is then aged for 12 months in French oak before bottling. 93 Points, Guia Peñín.
Juan Gil Silver Label 2020

Varietal Composition: 45% Cabernet Sauvignon, 45% Monastrell, 10% Syrah. The wine exhibits a vibrant, ripe summerberry and wild-cherry nose. The plush, rich palate has a smooth feel with notes of chocolate and spices paired perfectly with black and red fruit. Complex, structured and elegant, this wine will evolve for 2 – 3 years and drink well for many more.

Varietal Composition: Garnacha Deep cherry color, on the nose it presents intense aromas of ripe red fruit (raspberry) that combine perfectly with the spicy notes of cocoa, vanilla and liquorice that respond to a noble aging. Powerful and full on the palate with a very fresh and fruity mid palate, but tasty and complex, mineral, with a remarkable finish where the fruity and spicy aromas reappear in the retronasal. Attaeca Garnacha 2019

Varietal Composition: 100% Tempranillo Vivid purple in the glass. Aromas of forals and ripe berries are complemented by a subtle spice. Supple with juicy acidity. Blackberry, blueberry, and black plum are balanced with mocha flavors. Velvety tannins compliment the sweet fruit, closing with very good persistence.

Varietal Composition: Garnacha Tintorera & Monastrell Cherry garnet in color. Powerful aromas of dark chocolate, black fruit and fruit preserves which are mimicked on the palate by intense juicy flavors that linger. 92 Points Guia Peñín.
La Atalaya del Camino Red Blend 2020

Varietal Composition: 40% Cariñena, 40% Syrah, 20% Garnacha. "A fresh, balanced red, with a beam of ripe candied cherry and strawberry fruit layered with plush tannins and delicate notes of violet, dried thyme and anise that linger on the finish. Mazuelo, Syrah and Garnacha Negra. Drink now through 2025. " 89 Points, Wine Spectator.
Can Blau Cellars Red Blend 2019

Varietal Composition: 100% Tempranillo Deep purple and perfectly balanced between maturity and freshness. On the palate it is initially juicy, with layers of black licorice, cherry, plum jam, toast, oak and cedar. Supple texture with a lingering and pleasant finish.

Varietal Composition: 60% Monastrell, 30% Cabernet Sauvignon. 10% Syrah Purple/black in color, it offers a nose of pain grille, graphite, earth notes, spice box, black fruits, and a hint of balsamic. It opens in the glass to reveal excellent density, savory flavors, plenty of spice, and a lengthy, pure finish. It will evolve well for 2-3 years and drink well for many years. 95 Points, Guia Peñín.

Varietal Composition: 70% Monastrell, 30% Cabernet Sauvignon Lush fruit flavors of blueberry and boysenberry added to the raspberry and black cherry evident in the nose. Graceful tannins and ample acidity provide structure to keep the wine balanced and poised. This is a big, booming wine with the rich fruit flavors and aromas, yet it is whole and structured perfectly. The finish sees a wave of berry compote flavors, mixed red and blue fruits, that persists on the palate. 91 Points, James Suckling.
