Hors D'oeuvres Cucumber-Melon Gazpacho with Fresh Blueberries and Basil Gulf Snapper Ceviche on a Tortilla Chip with Crispy Jalapeno
Varietal composition: Grenache 32%, Syrah 23%, Cinsault 17%, Cabernet Sauvignon 11%, Rolle 9%, Grenache Blanc 5%, Counoise 3%. Displaying enticing aromatics of peach, white cherry and wild raspberry that are balanced by summer flowers, white tea and Provence herbs. These delicate flavors carry through to a creamy yet lifted palate that’s interwoven with rose petal and wet stones. The wine is in no way heavy or fat on the palate, but rather the palate has tremendous length in addition to the raspberry, cherry, peach, herbal, citrus and mineral core. James Suckling 90 points.

Salad Course Apple-Fennel Salad with Arugula, Feta, Watermelon Radish and Citrus Vinaigrette
Varietal Composition: 100% Chardonnay. The wine opens with inviting aromas of pear, honey andpineapple. On the palate, crisp lemon curd flavors, with notes of orange zest, apple pastry and spices, with a hint of fresh acidity. The wine is round and creamy with notes of oak beautifully integrated with the fruit flavors, all of which are complemented by a hint of vanilla and carry through the long and lingering finish. Wine Spectator 90 points.

Varietal Composition: 100% Pinot Noir The 2021 Signal Ridge Vineyard Pinot Noir is aromatic and complex, with trademark white pepper, soy, rose petal, and garrigue notes wafting from the glass. The exotic aromas presage blackberry, dark cherry, and orange peel flavors. On the palate the wine is deep, pure and intense, with bright acids and excellent focus and grip. Bravium Signal Ridge Pinot Noir 2021
Pork Course Traditional Pig Roast with Red Bean Cassoulet, Jalapeno Cornbread and House Pickles
Varietal Composition: 70% Tempranillo, 24% Cabernet Sauvignon, 3% Malbec, 2% Merlot and 1% Syrah. Containing rich aromas of thyme, raspberry, cherry and black pepper in the nose, notes of violet, blackcurrant and licorice also come through as secondary and tertiary aromas. Powerful and fresh on the palate, this wine has refreshing minerality and contains intertwining flavors of plums, baking spice and fresh forest fruit. With light, silky tannins and well-integrated acidity, the Quinta Sardonia ‘Q’ will continue to age well over time. While this wine does not need decanting, the estate recommends serving it slightly chilled and opening the bottle two hours before consuming in order to fully enjoy the gradual unfolding of aromas and flavors in the glass. Varietal Composition: 100% Moscato. Clear and refreshing with its characteristic sweetness coupled with well-integrated acidity, this is the par excellence dessert wine. With refined and subtle bubbles, this wine is fragrant and alluring. Containing layers of complexity, great balance and subtle acidity, this low-alcohol wine may be enjoyed both as an aperitif or as a dessert wine and should be served very cold.
