Varietal composition: 100% Sauvignon Blanc. A marvelous, complex and high intensity nose. Aromas of boxwood, Peruvian green sauce, passion fruit and orange blossom, mixed with herbaceous notes such as tomato leaf and wild herbs. Very fresh and mineral with a powerful start, good volume and body. Juicy, with wonderful length, thanks to crisp acidity. The finish presents fruity aromas such as passion fruit and guava making for a delicious wine that invites another sip. James Suckling 91 points.

Salad Course Strawberry Beet Salad with Golden Beets, Strawberry Goat Cheese Mousse, Pistachios, Arugula, and Fresh Strawberries, Finished with a Lemon Vinaigrette
Varietal Composition: 100% Pinot Noir. Cherry-red with delicate ruby-red highlights. A very intense, fruity wine with red fruit aromas such as cherry, cranberry, sage and earthy forest floor mingled with smooth nuances of spices and jam, combined with a hint of toasted almonds imparted by barrel ageing. Starts out very refreshing on the palate. Good volume and nice unctuous texture mid-palate. The structure reveals very smooth and elegant tannins. The aromatic complexity and red fruit notes return on the long finish, accompanied by good acidity. James Suckling 90 points.

Seafood Course Seared Red Snapper with Blackberry Sauce, on a Bed of Peperonata
Varietal Composition: 100% Carmenere Deep, matte, bright purple. Very intense and fruity, with notes of black fruit like blackberry and plum mixed with spicy nuances of roasted red pepper, cloves, bay leaf, rosemary, and subtle aromas of chocolate, toffee and roasted coffee beans due to ageing in French oak. Starts out smooth, refreshing and juicy with well-balanced acidity. The tannins are elegant, refined and silky. Black fruit aromas of black cherry and blackberry follow through to the aftertaste, culminating in a long finish. James Suckling 92 points.

Pork Course Pork Shank with Carrots and Potato Pave’ Finished with Cherry Pork Jus
Varietal Composition: 100% Syrah. A bright, intense ruby-red color with purple highlights. Deeply intense and fruity, with notes of blackberry and blackcurrant, red berries such as cranberries and spicy aromas of pink peppercorn, combined with soft notes of butterscotch and cedar imparted by oak ageing. Starts out excellent with good volume, well-balanced acidity and a very good structure. Fruity aromas of blackcurrant and spicy nuances follow through to the long, lingering finish.

Varietal Composition: 100% Cabernet Sauvignon. A delicate, generous nose rich in aromas of forest fruits such as cherry, blueberry, blackcurrant and cranberry, mingled with spicy notes of black pepper and rosemary, as well as subtle aromas of cedar imparted by oak ageing. Starts off very elegant and subtle, with incredible richness on the mid-palate, along with good structure and body, and well-balanced acidity. The texture is delicate and velvety. Reveals a long, well-balanced finished marked by aromas of red berries and a return to notes of black pepper. A wine characterized by elegance and finesse with excellent ageing potential. Wine Spectator 90 points.

Chip Wine
Varietal Composition: 78% Cabernet Sauvignon, 6% Petite Verdot, 6% Carmenere, 5% Syrah, 5% Cabernet Franc. Such demure depth and focus on the nose, showing high-grade cedar wood with brooding yet fresh blackberries, cassis and cigar, as well as hints of dark olives and red chili pepper. Beautiful cabernet character here. This is a very structured and full-bodied red, imbedded with lots of vertical, fine-grained tannins now, which will take some time to soften. The volume on the palate is quite impressive. James Suckling 97 points.
