Hors D’oeuvres Prosciutto Wrapped Melon Roast Pork with Sweet Pepper Jam Canape’
Varietal composition: 100% Sauvignon Blanc. Bright aromas of Meyer lemon, cantaloupe melon, and tropical fruits jump out of the glass. Medium-bodied and humming with energetic acidity, the palate reveals racy flavors of white peach, just-ripe pineapple, lemon zest, and stony minerality leading to a refreshing finish.

Salad Course Burrata Salad with Stone Fruit, Asparagus, Basil, Arugula, White Vinaigrette
Varietal Composition: 100% Chardonnay. The nose is zippy with citrus aromas of lemon and tangerine, stone fruits and toasted oak. The medium-weight palate is marked by refined minerality and oak supporting a ripe palate of pear, lemon cream and fresh apple flavors. The finish is a crescendo of baking spice, and crème brûlée flavors.

Varietal Composition: 81% Petite Sirah, 17% Zinfandel, 2% “Mixed Blacks” field blend of red grapes. The nose reveals a mélange of black raspberry, tree-ripened Santa Rosa plum, and cigar tobacco. Medium-plus to full-bodied, the wine unfolds with layers of black cherry preserves, vanilla, and hints of garrigue framed by a careful selection of Fusion barrel oak; savory notes imparted by the American oak, Hungarian oak elevates Petite Sirah’s spice, and the French oak affords the wine a smooth and luxurious vanilla-scented finish.

Varietal Composition: 94% Cabernet Sauvignon, 4% Petite Verdot, 1% Merlot, 1% Malbec. Robust bramble fruit and tart cherry aromas mingle with savory spices, and milk chocolate and develop into blue fruit and cigar box spices as they coat the palate. Flavors of black plum and dried herbs flood the palate, framed by a careful selection of Fusion barrel oak; savory notes imparted by the American oak, Hungarian oak elevates Zinfandels’ characteristic sweet spice, and the French oak affords the wine a smooth and luxurious finish.

Chip Wine
Varietal Composition: 70% Cabernet Sauvignon, 10% Merlot, 8% Cabernet Franc, 7% Malbec, 5% Petit Verdot. The 2019 Artistry red wine is taut and focused with crushed raspberry, red cherry, mocha, and crushed rock minerality on the nose. The palate is refined with bold tannins and racy fruit flavors framed in oak toast and baking spice which carry all the way through the long finish.
