The ongoing draught presented some challenges, but the conditions brought smaller berries with exceptional quality and concentrated flavors. This lively wine greets you with enticing aromas green apple, honey suckle, and white peach. Vibrant flavors dance on the palate bursting with citrus and herbaceous notes. Couple these aromas and flavors with bright acidity and minerality, and you are left with a delicious summertime wine that leads to a lingering finish. The 2018 vintage in Sonoma is considered one of the best vintages of the century. You will understand why when you taste this Cabernet Sauvignon. This wine is made from 100% Cabernet Sauvignon grown on the Caton Vineyard in the Moon Mountain District of Sonoma. The wine was aged for 15 months in 60% new French oak. The 2018 Estate Cabernet greets the palate with rich and robust flavors of black cherries, plums, and cassis, followed by oak notes of sandalwood and vanilla. These dark flavors produce a dense textured mouth feel that combine with soft sturdy tannins, followed by a long silky-smooth finish.

Temperature rose consistently through Labor Day while September brought high temperature spikes accelerating the last weeks of harvest. This vintage resulted in smaller berries and concentrated fruit. This wine is 100% Petite Syrah from the Caton Vineyard in Sonoma and was aged for 15 months in 50% new French oak. This deep inky wine tempts you with delicious aromas of blackberry bramble that embrace subtle hints of mint. The deep indigo tones unveil dark fruit flavors and a big, structured mouth feel, then leaves you with a light toasty finish lingering on your palate.

Barracks is a north to south facing vineyard that routinely produces bold, concentrated wines with textbook cabernet aromas and flavors with a firm grip and lingering finish. The 2020 harvest started with idyllic growing conditions in Sonoma Valley. Temperature rose consistently through Labor Day while September brought high temperature spikes accelerating the last weeks of harvest. It took a unpredictable turn mid-August with wild- fires leaving uncertainty around the county. Luckly, the early harvest allowed us time to pick the Caton Vineyard with quality fruit. This vintage resulted in smaller berries and concentrated fruit. The Barracks is deep garnet in color with highly concentrated aromas of baking spice and dark fruit present in the glass. This is a one-of-a-kind wine in the Caton Cabernet Collection with a balanced structure and age-worthy characteristics. Chip Wine
Tytanium is the top of the line from Ty Caton. It is a red blend of 38% Cabernet Sauvignon, 33% Petite Sirah, 24% Syrah, 3% Malbec, 2% Merlot. 2019 was a classic Northern California vintage with a nearly ideal growing season in Sonoma Valley. The late rainfall and a gradual temperature rise into September led to longer hang times and even fruit development. This harvest offers concentrated flavors and well-balanced fruit that will steadily mature and stand the test of time. This sophisticated wine opens with alluring aromas of wild black cherry, anise and cocoa. Deep indigo tones lead to a soft, silky generous mouth feel accompanied by flavors of dark fruit and toasted oak. Layered, complex flavors remain lingering on the palate with an exceptionally long finish. Perfect for any occasion, this wine pairs beautifully with filet mignon or portobello mushrooms.
