The 2021 Anemos White is from the Palivou Estate Winery in the ancient Nemea region of Peloponnese, Greece. The wine is a blend of 70% Roditis and Moschofilero 30% grapes. The Moschofilero offers the aromatics and the Roditis the crispness. Anemos is a fruity wine with aromas and flavors of fresh fruits: apples, bananas, pears, pineapple and lemon blossoms. A pleasant and balanced wine with light body, refreshing acidity and fruity aftertaste. The wine is best served between 46°- 54°F and pairs well with white pizza made with ricotta, seared scallops or Greek salad.

Salad Course Charred Asparagus Salad with White and Green Asparagus, Arugula, Shaved Radish, Fresh Dill and Feta Cheese with a Shallot Vinaigrette
The 2021 Plano Assyrtiko white is made from 100% Assyrtiko grapes. Assyrtiko is a rare, classy white grape, possibly some of the greatest varieties found in the Mediterranean basin. It originated from Santorini (Assyrtiko-Santorini) but it spread all over Greece, becoming, in terms of quality, one of the most important native varietals. It produces mainly dry white wines, some of which are being aged in oak. The result of Assyrtiko’s cultivation in Drama’s ecosystem is a gorgeously complex and unique wine. The color is shiny golden yellow. The nose is characterized by a beautiful combination of apricot, tropical fruits and mineral aromas with a fine touch of botanical nuances. The refreshing acidity in the mouth balances very well with the creamy texture and offers a long-lasting aftertaste. Serve at 50°F. Enjoy with seafood pasta, grilled shrimps and asparagus salad, pancetta risotto.

Markovitis Xinomavro is made from 100% Xinomavro grapes. The Markovitis Winery is located on the base of Mt. Vermio in the north part of Greece, in the western part of the prefecture of Macedonia, and known as the first organically farmed vineyard in all of Greece. This location has cold, humid winters and dry, hot summers. All grapes are hand-picked and de-stemmed with minimal intervention. The dedication to grow only Xinomavro has allowed the Markovitis Winery to excel in producing a top-quality wine. This wine has a high acid content and rich notes of sun-dried tomato, earthy mushroom and red cherries. The tannins are perfectly integrated and soft. The wine is aged for 12 months in large, used, Hungarian oak barrels. A truly unforgettable wine. A great match for prosciutto pizza, grilled cauliflower steaks or creamy risotto.

Beef Course Beef Shank Osso Bucco with Sweet Potato Polenta, Charred Carrot, and Leeks
The Techni Alipias is a blend of Cabernet Sauvignon 70% and Agiorgitiko 30%. The Cabernet Sauvignon, and Agiorgitiko grapes that take part in the wine's varietal composition are vinified separately, by the classic red vinification method. After alcoholic and malolactic fermentation, the wine is aged for at least 12 months in French oak barrels. On the nose it is fruity and complex, with a beautiful open bouquet of cherries and plums, with notes of pepper and vanilla. It is rich, mature, fleshy and well structured, with beautifully softened tannins. This wine pairs well with red meats and poultry with rich sauces (beef ragout, tenderloin stuffed with pistachios), barbecue and wild game. Decanter 97 points.

Dessert Course Baklava
The 2018 Palivou Estate Nemea is the flagship wine from Palivou Estate. The wine is made from 100% Agiorgitiko grapes. After harvesting there are 5 days cold maceration and then traditional red vinification using after-fermentation’s infusion methods, and strict control of temperature. Aging for 12 months in French barrels 30% new, 30% second and 30% third use and then 8 months aging in the bottle. A full-bodied wine with soft tannins. Rich aromatic character with intense fruit and clean aromas of cherries, strawberries and gooseberries. A perfect example of what Agiorgitiko grapes can do. Pair this wine with red meats and spiced poultry with rich sauces and Italian home cooking, venison and smoked meats. Best served at 60° - 64° F. Decanter 89 points.
