Bodegas Emilio Moro’s 2020 Polvorete is a very expressive wine in every way. Straw yellow in color, clean and bright, with a medium intensity. On the nose it shows its aromas of fresh white flowers and fruit, typical of the Godello variety. The palate is fresh and persistent without losing the balanced acidity typical of the variety. The wine is made from 100% Godello grapes fermented in stainless steel and aged in the Sur-Lie method. 90 points, Wine Advocate.

Salad Course Quinoa Salad with Baby Gem Lettuce, Heirloom Tomato, Pepitas, and Beet-Honey Vinaigrette
The Finca Resalso is made from 100% Tinto Fino (Tempranillo) grapes. The wine stays four months in French oak barrels before bottling. This wine displays an intense, ripe black cherry color. On the nose, it develops well with ripe red berry hints (mulberry and blackcurrant) intermingled with elegant, balsamic, oaky aromas. On the palate it is powerful with nuances of incense, spice and sweet-tasting cinnamon. This wine combines the sweetness of the ripe tannins with the polyphenolic structure of the Tinto Fino variety. Well balanced, lingering, harmonious and with a lingering finish. 89 points, Wine Advocate.

Pork Course Sous Vide Pork Tenderloin with Butternut Squash and Green Peppercorn Sauce
Emilio Moro Tinto is the flagship bottling from the Bodega. It is produced from 100% Tinto Fino from vines ranging from 15-25 years of age. It undergoes a 28-day skin maceration followed by 12 months of aging in French and American oak barrels. This is a classic example of Ribera del Duero and an excellent value. Deep, dense color. Aromas of smoky oak and roasted black cherries. In the mouth it’s supple with abundant ripe dark fruit on the palate. There’s a firm grain of tannin on the finish. Richness is lifted by a zest of acidity. A promising result in a complicated vintage and a good introduction to the Emilio Moro style. 91 points, Wine Advocate.

Beef Course Braised Beef Short Rib with Goat Cheese Polenta and Carrot Puree
La Felisa is the latest creation of José and Javier Moro, current owners and third generation of the family business, and their first organic wine. It pays homage to their mother, Doña Felisa, and by doing so, also to the tradition and values which José and Javier grew up with, handed down by their parents: a love of the land and vineyard. Deep cherry red in color, with intense violet rims. It surprises on the nose with aromas of recently fermented grapes. The ensemble is intense and very fruity, with primary notes of Tempranillo at its most natural, blackberry, licorice; something different in our variety. It has great volume in the mouth, persistent, meaty tannins, balanced acidity and a marked passage. 91 points, James Suckling.

Dessert Course Berries and Cream with Cardamom Chantilly Cream over House shortcake
The flagship wine that carries the name of the project is currently the 2016 Cepa 21, produced with youngish Tempranillo matured in French barrique for 12 months. It has some spicy and smoky notes from the élevage in oak, which gives it a showy profile. It's ripe without excess with a sweetness of fruit that coats the palate and makes it a bit jammy. Polished tannins encase red cherry, currant and anise notes that are seamless and balanced. Accents of spice, orange peel, vanilla and mineral give complexity through the finish.
