Halter Ranch 2011 Rose is produced in what they call a “Southern Rhone Valley style”. It’s a Grenache based blend – 43% Grenache; 42% Syrah and 15% Mourvedre. This was not the rosé you will expect – it is light and crisp and offers just the right pop to remind you that you are drinking a summer red. The nose on this pink beauty is vanilla; sweet raspberries and cherries. Intoxicating. The palate is amazing…velvety to the tongue; cherries; pomegranate and raspberries with moderate acidity. It is smooth with a long, sensual finish. This is a dry Rose; not sweet. Enjoy it paired with a grilled chicken Cobb salad and will hit the spot when it came to handling the blue cheese & bacon flavors and it has been said that avocado and Halter Ranch Rose are a match made in heaven!

A classic Southern Rhône Valley white blend, Côtes de Paso Blanc offers a complex bouquet of lemon blossom, jasmine and pineapple. The blend of 58%Grenache Blanc, 18% Roussanne, 16% Picpoul Blanc, and 8% Viognier is rich on the palate with flavors of melon and ripe peach which segue into a clean, mineral finish. Fermented in and aged ‘Sur Lie’ five months in 100% neutral French oak barrels. The barrels were stirred two times per week after finishing primary fermentation to incorporate the lees. Delicious to sip on its own, this unique wine is also a wonderful complement to pâté, seafood, poultry, and creamy, soft-ripening cheeses. Enjoy it over the next 2-3 years.

This Syrah is crimson red with a vibrant purple hue. Plumb, bing cherry and spice are surrounded by a subtle caramel aroma on the nose. The entry is driven by dark fruits, blackberry, black currant and cassis. It is quite expressive on the nose and palate, the combination of 81% Syrah 11% Grenache 8% Malbec shows dry tannins on the mid-palate and big, firm tannins on the finish. It has a pleasant bouquet of blackberry, smoke and violets, dark fruit provides a savory roasted spice tone while crisp underlying acidity lends brightness and zest make it an excellent paring with game, fowl, lamb and smoked meats. “ Deep ruby. Powerfully scented, expressive bouquet of raspberry, cherry and Asian spices; shows the red side of syrah. Silky red and dark berry flavors deliver solid punch but are also lithe and precise. Finishes clean and sweet, with impressive persistence and slow-building tannins that clamp down on the fruit a bit. Lamb Course Rosemary And Garlic Braised Lamb Shank Rich Red Wine And Lamb Jus With Grilled Asparagus
Halter Ranches red table wine, Synthesis, blends the elegance and complexity of Cabernet Sauvignon with the rich, spicy ripeness of Syrah. A harmonious combination, this wine offers aromas of red fruits, pepper and spice with flavors of bing cherry and plum. This delicious78% Cabernet Sauvignon and 22% Syrah blend is destemmed and fermented in closed top fermentors, with punch-downs and pump-overs twice daily for an average of 18 days then aged 13 months in French oak barrels, 40% of which were new oak. Synthesis is the perfect red for grilled burgers, marinated lamb kebobs, barbecued chicken, pepperoni pizza and red-sauce pastas. Delightful to drink now, it will age gracefully in bottle for another 8-10 years.

Blended with traditional Bordeaux varieties, the Cabernet Sauvignon is crimson red with a light purple hue. Deeply concentrated, this wine displays aromas of blackberry brambles, black currant, fig and a touch of cocoa. The attack on the palate is driven by an explosion of red and black fruit, framed by elegant structure. Soft integrated tannins guide this beautiful wine through a smooth, rich finish. The Halter Cabernet Sauvignon is 77% Cabernet Sauvignon, 12% Malbec, and 11% Merlot, the grapes were destemmed and fermented in closed-top fermentors, with punch-downs or pump-overs twice daily for 20 days and aged 18 months in French oak barrels, 35% of which are new. Delicious now with grilled steak and lamb, prime rib, venison stew and other hearty meat dishes, it will age well for another 10-15 years.

Ancestor is Halter Ranch’s Bordeaux-style reserve blend. Our winemaker created this blend from his choice barrels of Cabernet Sauvignon, Petit Verdot and Malbec. The 2010 Ancestor offers complex aromas of ripe blackberries, and allspice. Elegant and balanced, this age worthy wine has soft, seamless tannins and a plush round mouth feel. Ancestor pairs well with beef, lamb and game and will develop beautifully in the bottle for the next 10-15 years.
