Refreshingly dry and medium-bodied with a rich crisp acidity where citrus notes provide some life before the rush of minerals at the finish. Appetizer Course Spinach, Garlic And Asiago Stuffed Artichoke Bottom Basil And Roasted Tomato Butter
Featuring honeysuckle, orange blossom and sweet spice aromas, our Viognier shows flavors of apricot and white peach with a burst of tropical mango with a hint of tangerine. On the palate the wine is medium-bodied and refreshingly dry with balancing crisp acidity. The grapes are hand-harvested, transferred into a CO2-blanketed press, then pressed to tank, where the juice settled for 48 hours. Then it’s off to half barrels and half stainless to see who will yield what secrets and then it goes to tank for four months, where the lees are stirred daily. For all that, it is quite simply lovely Viognier, with 6 percent Roussanne to give it derriere. All this helps deliver a bouquet of lemon zest, citrus, light white pepper and spice. Light bodies with goo structure and a pleasant floral finish. Enjoy chilled by itself or with fresh fruits, cheeses and with spicy dishes and also pairs nicely with Sole Amandine. This Viognier has received “Best of Show” honors at the Central Coast Wine Competition in 2009 and a score of 94 and a Gold Medal/Best of Class at Los Angeles Int'l Wine Competition 2011

Fowl Course Fennel And Mushroom Duxelle Stuffed Quail Bing Cherry And Red Wine Reduction. Parmesan Risotto And Julienne Of Squash And Zucchini
This Merlot hails from several vineyards planted in the alluvial soils of the Estrella and Creston Districts and to the sedimentary clays of the Templeton District west of town. This wine is aged 18 months in barrels and is comprised of: 84% Merlot, 11% Cabernet Franc, 4% Cabernet Sauvignon, and 1% Syrah. Cabernet Franc from the gently rolling loamy soils of our “Brady Vineyard” is blended to soften and accent the Merlot. The fusion of concentrated fruit-forward Merlot from Paso Robles, married to soft and flowery Cabernet Franc grown on a rigorous complexity, and satisfying structure. Rich briary aromas of blackberry, raspberry, and black cherry accentuated by hints of tobacco, earth and smoky oak emanate from the 2008 Merlot. Lush, ruby red color indicates the level of concentration yielded by the vintage and the vineyards. On the palate, rich flavors mirror the aromas and are complemented by soft, silky tannins on the finish. The 2008 received an impressive score of 98 and the Double Gold at the 2011 California State Fair Wine Competition.
